The healthy salad recipe is: Kale, Avocado, Pomegranate And Orange and our hero ingredient today is Avocado.
The avocado is rich in copper, iron, phosphorous, potassium and beta-carotene. A great source of folic acid (ideal for pregnant women), Vit B3, B5,Vit K and E. It is an excellent source of mono saturated fat, an all round perfect food.

Salad Recipes: Kale, Avocado, Pomegranate And Orange
• 1 bunch of green flat leaf kale, washed and finely shredded. Remove the centre vein if it’s too thick or corse.
• 1 avocado chopped
• ½ pomegranate seeded
• 1 orange zest and segments chopped
• 2 tbsp. cold pressed flaxseed oil
• Juice of 1 lime
• Pinch of Celtic sea salt
• 1 tbsp. of chopped mint
Add the orange zest and salt to the flaxseed oil and combine with shredded kale. Allow the kale to soften and marinate for 10 minutes. Combine the pomegranate, avocado, orange segments and lime juice and mix through the kale, serve on a platter topped with fresh mint.
