Today our hero ingredient is Blueberries.
Blueberries are rich in Vit C and beta-carotene. These little blue warriors are an excellent anti oxidant with cancer fighting properties whilst cleansing our blood and improving circulation. Can have a laxative effect when over consumed.

Salad Recipes: Mixed Water Cress And Rocket, Blueberries, Mint & Grilled Haloumi
- Small bunch of rocket washed (arugula)
- Small bunch of watercress washed
- ½ cup of blueberries washed
- 4 slices of Haloumi – grilled or pan fried
- 1 tbsp of olive oil and ½ freshly squeezed lemon juice mixed
- 1 tbsp. of freshly chopped mint
Combine the rocket, watercress and blueberries with the olive oil and lemon juice dressing. Transfer on platter and top with grilled haloumi and fresh mint
