Slow Cooked Lamb with Rosemary and Garlic
4 lamb shanks
16 shallots, peeled and left whole
2 cloves garlic peeled and crushed
3 sprigs of rosemary
Approx – 2 tbsp Coconut oil or ghee for frying
300 ml good chicken, veal or beef stock
Sea salt and black pepper
· In a large sautés pan, heat coconut oil or ghee, season the shanks and seal the meat on medium heat until brown all over. Remove from the pan and place in slow cooker
· Brown shallots in same pan, 2-3 minutes, then reduce the heat, add the garlic, fry for 30 seconds with the shallots, and don’t brown the garlic as it goes bitter in taste. Add onions, garlic and rosemary to slow cooker.
· Poor over the stock and cook on low for 5-6 hr until the lamb is soft and tender.
Serve with steamed vegetables and/ or either herbed Quinoa, roasted or mash potato
