55 gr raisins
3 Celery stalks
3 star anise
1 bunch coriander
4 garlic cloves
4 tbsp curry powder
1 tsp Thai red curry paste
2 tbsp tomato puree
25 gr ginger
1800 ml Olive oil
Zest of ½ lemons
2 stalks of lemon grass
Roughly chop onion, celery, leek, garlic, apple, tomato, ginger, lemon grass and lemon zest.
Heat a little oil in saucepan and add the veg, cover and let them sweat till soft.
Add raisins, star anise and coriander, cover and sweat a few more minutes.
Stir in curry past and tomato puree. Cook and stir for 2 minutes
Stir in oil with salt. Simmer gently over very low heat for 2 hours.
Strain and bottle…use as required
Keeps almost indefinitely
