Salad Recipes: Green Beans, Pomegranate, Crisp Pancetta, Toasted Almonds And Fresh Mint
- 500gr green bean, topped and tailed and blanched
- ½ pomegranate seeded
- 8 slices of pancetta crisped
- 2 tbsp. fresh chopped mint
- 2 tbsp. toasted shredded almonds
- 1 tbsp. of olive oil and ½ freshly squeezed lemon juice mixed
Toss the green beans in the olive oil and lemon juice dressing and transfer onto platter, arrange the pancetta in and around the beans, sprinkle over with pomegranate, toasted almonds and fresh mint
